A Theremin creates a magnetic field, and if you interrupt the field in a certain way, you get a tone.

Clara Rockmore was a friend of mr. Theremin himself, if I'm not mistaken. She played the early theremins, which had a highly nonlinear behavious and that made them very hard to play. Like on a violin, the performer must have an excellent ear for pitch and a memory for exact motions and positions, which is what makes this instrument extremely difficult to play. Clara Rockmore was a highly talented violin player before she dedicated herself to this instrument, it's really not recommended as a first instrument. I suggest getting "The Art Of The Theremin" album if you want to hear more by her.

That's not surprising since air doesn't really have points of reference like frets or keys or buttons to guide you.
