Is there a game mode where you can stack seasons? I mean, can you start the game in 2011-12, and end it in 2020-21 or something? If yes, how are rookies generated? Do players even age?
Be-A-GM Mode. You can do all that and then some. There are several European leagues and the entire CHL to get rookies from. You can do up to 25 years in Be-A-GM, and manage several different teams. Rookies have potential for offense, defense, and athleticism. The ratings are on a A to E- (E- is the lowest I've ever seen) the higher the rating the better. Depends on how the play, where they play (what league, correct position), and how you coach them determines how they rank up. Every player has a number ranking from 50 to 99, the higher the better, and every off-season their ranking changes depending on age, potential, and how well they produced during the season/playoffs. If you're young and have good potential you're ranking will go up. If you're old, 35+, and stop producing offensively you're ranking will go down and the player will eventually retire. When you get far enough into your GM career, the game will just start making random players. It has a database of names on the disc and will just randomly select a first name, last name, and birth country. Sometimes you'll get a John Smith from Yugoslavia, but the game is usually pretty good and keeping things realistic.
I personally love Be-A-GM mode and play it all the time. NHL games come out every September, and I'm usually playing the old version up until the release date of the new one. NHL 12 came out here September 13th, I was playing NHL 11 until september 12th.
