Lets face it, a lot of bands go out on a low note. What bands went out on a high note?

The band

- must be currently defunct (i.e. they split up, or only reunite for festivals, but basically no reasonable possibility of recording another album on the horizon)
- must have put out more than 1 album

My votes would be for

Sentenced - The Funeral Album.
Death - The Sound of Perseverance

Cirith Ungol - Paradise Lost
Saint Vitus - Die Healing
Edge of Sanity - Crimson II
are the first ones to come to my mind.

Also, I second your choice of Death's The Sound of Perseverance.

The problem is that so many bands return, and disappoint, when they would have been better advised to let it go and concentrate on other projects.

Emperor-Prometheus: The Discipline of Fire and Demise

Death and Edge of Sanity are great choices too, but both were kinda last albums under unusual circumstances (Chuck's illness in the former, obviously, and Swano basically released a solo album under the EoS name).

I agree, Death for sure. Other than that, I can't really think of much.

Reverend - A Gathering Of Demons.
Type O Negative - Death again.

Control denied, Wayne, but only with one record.

Anacrusis is the only other band I can think about apart from Death.

A year or two ago I could've named a lot of albums, but since then a lot of bands have regrouped to work on/release new stuff.

At The Gates - Slaughter of the Soul

Atheist - Elements

Bolt Thrower - Those Once Loyal (they haven't broken up but have decided not to write any more music)

Carcass - Swansong - a fitting epitaph to the band.

Edge of Sanity - Crimson II

Dungeon - The Final Chapter (though not as good as "One Step Beyond")

Morifade - Domi<o>Nation (this band has been looking for a record deal for like two years. I don't see them actually releasing their new album)
